The past few months have been pretty busy. I have been helping Hedrick open his Cafe. A cafe that serves Authentic Central American Cuisine.It has been quite a learning experience for me. I have learned what goes into opening a business: permits, a plumber, a carpenter, people to install alarms, hard labor on your own part and more. But the Cafe is up and running now and we can enjoy our hard work being admired by those that come in.

Our first day was slow but the second day picked up like a spark on a dry grass field. We have had a customer every hour if not more. It has been amazing to see the people come in and enjoy their meals. We are enjoying getting started! There is still more to learn; as we go through the day we are reminded of the things that we need to get or how we can do things differently.
On top of helping Hedrick open the Cafe and be his support, I get to learn how to make some of the dishes that we serve. So far I have learned how to make handmade tortillas and chuchitos. I have been able to learn all of these things from his mother which is a great experience. She says everything in spanish knowing I only know a little. But I am learning more and more. She gets on me for not talking. Apparently, I am doing well with my spanish and cooking.
